 Fish maw is extremely dense and MUST be properly rehydrated before cooking:

  1. Soak: Soak the dried maw in cool filtered water in the fridge for 24 hours
  2. Steam: Steam the soaked maw for 10-15 minutes with a few slices of fresh ginger to remove any oceanic scent.
  3. Rest: Submerge it in clean, cool water and refrigerate for another 12-24 hours until thick, spongy, and beautifully soft.
